Banana Crumb Muffins

On Monday my Mother in Law dropped some of these off for us and they are so yummy.  Even the kids all liked them and usually Colton is the only one who will eat Banana Muffins.  I had to get the recipe from her so I could make more since the kids are out of school tomorrow and I wanted to make something tasty for them to eat when they get up at the crack of dawn (or before that, usually)!  I don't know where the recipe came from originally, but I know she gets a lot of recipes from All Recipes.com so it may be from there.

Here is the recipe for you...

Banana Crumb Muffins

Ingredients for Muffins
  • 1 1/2 cup flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3 mashed bananas
  • 3/4 cup sugar
  • 1 egg
  • 1/3 cup unsalted butter, softened
  • 1 tsp vanilla
Ingredients for Crumb Topping
  • 1/3 cup brown sugar
  • 2 Tbsp. flour
  • 1/8 tsp. cinnamon
  • 1Tbsp. unsalted butter, softened
Mix dry ingredients, set aside.  Mix banana, sugar, egg, butter, vanilla with mixer then add in the dry ingredients.  Fill muffin pan (12 muffins), you will have each cup about 3/4 filled up. (If you don't use cupcake liners make sure to spray your pan.)


Mix up the Crumb Topping ingredients.  I mashed it up with a fork until the butter kind of mixed all up with the sugar.  Spoon the topping over the muffin batter.


Bake for 20 minutes at 375°.  Let cool for a bit and then finish cooling on a rack.
